Cuba at Italy’s Terra Madre and Slow Food Conference

Cuba will be represented by six delegates at the Terra Madre and Slow Food International Forum in Turin, Italy, which aims at encouraging the consumption of healthy food instead of the so-called fast food.
The conference, to take place October 25-29, will be attended by members of community projects, such as Food Preserves, Healthy Life and Pure Air, the El Romero Eco-Restaurant, the Cuban Animal Production Association and the Mayabeque Study Center for Rural and Agricultural Development.
Jose Lama, who leads the Food Preserves community project, told ACN that he will share his experiences at the conference, particularly about 20 different preserves, which they use to cook meals every day.
Lama and his wife Vilda Figueroa, a chemical engineer, give courses for adults and children about useful recipes to preserve vegetable, fruits, beans and meats. The couple prepared a stock of literature on their project, including the website www.alimentacioncomunitaria.org on food preserves.
The Terra Madre network meets in Turin every two years to identify and promote new agricultural and food consumption initiatives that are friendly to the land and the ocean, and to the health of human beings.
