The Meat Company of Sancti Spíritus has launched a new production line dedicated to mechanically deboned meat (MDM), purportedly the first of its kind in Cuba. Donis Gómez Salas, the director of the Meat Company of Sancti Spíritus, revealed that the production line's cost was $500,000, with expectations of recouping the investment. "Internationally, MDM is priced around $1,000 per ton. By producing 60 tons monthly, we save a considerable amount of foreign currency. Furthermore, converting this amount into sausages could yield approximately 2,000 tons," he stated.
